At Oca (Italian for goose), customers might savor a sandwich or cured meat plate while enjoying a pint or craft cocktail by Sun King. Vincent Salas, who joined Goose in March of 2008, was assigned the enviable position of Oca's market manager at Sun King Spirits. "I'm proud to be representing a nationally recognized charcuterie program developed by Chef Chris Eley, as well as top shelf food pairings to go with innovative local spirits, cocktails and beer," he says. "It's a gorgeous building right off the Monon Trail, perfect for meetings, dates and just hanging out on our awesome patio or relaxing by the fireplace upstairs." For years now, our personal favorite sandwich has been the Batali, an homage to the famous (and infamous) chef; consisting of coppa, soppressata and capocollo with giardiniera and various other garnishes on a baguette, this masterpiece should be on everyone's culinary bucket list. Now that we can just stroll across the street from our offices at the Indiana Design Center to enjoy one, life is even better. Patrons might also order housemade sausage or meatballs, or a luxurious and substantial meat platter for sharing. "We call it The Tour," continues Salas. "It's a literal tour of our craft charcuterie and cheese case, complete with accouterments like olives, jams and pickles. Each one is made unique daily. ey're perfect for two to four guests, but with notice can be made for a limitless number for catering orders." Cheeses include offerings from Tulip Tree Creamery, an Indianapolis dairy that justifies comparison with the country's finest.
