Not Your Grandfather's Pie Written by Neil Charles Photography by Andrew Kung From the moment the first Stateside pizzeria opened its doors in New York in 1903, America's love affair with this iconic dish has never wavered. Over the intervening century, the humble pizza has found its way into every corner of the gastronomic road map, from the street vendor's hearty slice to the designer creations of Wolfgang Puck, by way of deep dish, thin crust, stuffed crust and flatbread. Today's pizza is more likely to be eaten at home than on the street corner or in a restaurant, such is our love of home-delivery; but love it we do, regardless of where we eat it. 83
